This Recipe can be converted to Vegan depending on substitutions.
Salt and Pepper
Step1. Peel and cut 1 Eggplant. Put into bowl, add salt, stir and let sit 10 minutes. Cut 1 Tablespoon Ginger, 1 Tablespoon Green Onion, 1 tablespoon garlic clove, 5 Oz. Ground Beef (or Substitute with Beyond Meat to make Vegan Recipe).
Step2. Put Eggplant on Paper towel and pat dry.
Step3. Use Laconiko EVOO or Laconiko Garlic EVOO on pan and stir fry Eggplant and brown on both sides.
Step4. In separate pan, use Laconiko EVOO and stir fry the meat until brown. Add 2 tablespoons chili sauce. Add garlic, ginger, and green onion, and stir together. Add 4 tablespoons sugar, 2 tablespoons Laconiko Dark Balsamic Vinegar, 1 tablespoon soy sauce, and Eggplant and stir in. Add salt to taste and ½ tablespoon of white pepper. Cook 3 minutes.
Add 2 tablespoons butter and a drizzle of Laconiko EVOO in a separate frying pan. Add 4 Fluid Ounces of uncooked spaghetti into pan and stir in. Add 1 cup Rice and stir in. Add 1 stick cinnamon, 4 bay leaves and stir in. Add water to cover rice. Bring to boil and cover pan with lid. Simmer until rice is cooked.
Serve warm with Eggplant on top of rice!
