This is a specially selected balsamic vinegar from Modena, Italy and is obtained from the long maturation of cooked grape must of Trebbiano and Lambrusco grapes. It is slowly aged in fine quality wooden barrels composed of oak, mulberry, chestnut and juniper until the product is sweet and dense (high density of 1.34). When properly aged, it gives the vinegar a wonderful intense aroma with a dense velvety texture, while maintaining a lightness and delicate hint of acidity (4.5%). It is incredibly versatile for many dishes. Upscale a simple medley, summer salad, use it for a glaze over meats, as a reduction over cheeses, and even drizzle it on top of ice cream.
