Baked Shrimps with Tomatoes and Feta

This classic Greek dish of baked shrimps are very popular in Athens. Minimum time and ingredients. 

Ingredients: 

15 Large Raw Shrimps, cleaned 

4 tomatoes, peeled and roughly chopped

1 yellow onion, peeled and finely chopped 

2 garlic cloves, peeled and diced

1 tsp tomato paste

6 oz crumbled feta cheese

2 tbsp Laconiko Extra Virgin Olive Oil

1 tbsp finely chopped fresh parsley

Salt and Pepper to taste

Directions: 

Step1. Preheat the oven to 400F

Step2. Heat the olive oil in a large skillet 

Step3. Add the onion and garlic and sauté for 5 minutes or until softened. 

Step4. Add the tomatoes and tomato sauce and cook over medium heat for 10 minutes. Season with salt and pepper to taste. 

Step5. Add the shrimps and cook for 5 minutes

Step6. Scatter the feta cheese on top and bake for 10 minutes. 

Step7. When it’s ready sprinkle with the parsley.
