Griddled Smoked Chipotle Ribeye Steak, Asparagus & Tomato Recipe

To cook a juicy ribeye steak on a flat-top griddle (like a Blackstone or Traeger Flatrock), preheat the surface to medium-high heat (350°F to 400°F) and sear the steak for 3 to 4 minutes per side. As mentioned in our recent blog by Mary Flynn, PhD, RD, about cooking with extra virgin olive oil, despite some claims in the U.S. stating otherwise, EVOO produced the least number of polar compounds when heated, indicated it was the most stable oil for cooking up to 464ºF.

Prep the Ribeye

  • Bring to room temp: Take the steak out of the fridge for 30 to 45 minutes before cooking so it cooks evenly.
  • Pat dry: Use paper towels to remove all surface moisture. This helps create a great crust.
  • Season: Coat generously with coarse salt, black pepper, or your favorite steak rub right before it goes on the griddle.

Cook on the Griddle

  • Add oil: Apply a thin layer of Laconiko Smoked Chipotle Olive oil to the hot griddle surface.
  • Lay down the steak: Place the steak on the griddle, laying it away from you to avoid oil splatters. Press down gently with a spatula for full surface contact.
  • Flip and sear: Cook for 3 to 4 minutes on the first side to build a deep brown crust. Flip the steak—some griddle masters like moving it to a fresh, oiled spot on the griddle for the second side—and cook for another 3 to 4 minutes.
  • Check temperature: Use a digital meat thermometer. Pull the ribeye off the heat when it is 5°F below your target temperature, as it will keep cooking while resting:
    • Medium-Rare: Pull at 125°F–128°F (final temp around 130°F–135°F)
    • Medium: Pull at 130°F–135°F (final temp around 140°F–145°F)

Rest: Let the steak rest on a cutting board for 5 to 10 minutes before slicing, then add some spice to the stead with our Laconiko Smoked Chipotle Olive Oil.

After placing steak on griddle, add washed asparagus on griddle on medium-high heat (350°F to 400°F).

To griddle asparagus, cook trimmed spears in olive oil on a preheated medium-high griddle for about 5 to 7 minutes, turning occasionally until tender and charred.

Prep the Asparagus

  • Wash and dry the fresh asparagus spears thoroughly.
  • Trim off the tough, woody bottom ends (about 1 to 2 inches, or where the stalk turns white).
  • Coat the spears evenly with Laconiko Chipotle Olive Oil, salt, and black pepper. You can also add minced garlic.

Tomatoes

Dice cherry tomatoes and char them on griddle for a few minutes, then remove, add salt and drizzle with Laconiko Chipotle Olive Oil to liven up your veggies.
