Laconiko Lemon and Fresh Thyme Chicken Kebabs Recipe

Welcome to a taste of the Mediterranean! These succulent Lemon Thyme Chicken Kebabs are a perfect showcase for the liquid gold of Laconiko Extra Virgin Olive Oil. While the bright zest of lemon and earthy aroma of fresh thyme are the stars of the marinade, it's the rich, fruity notes of a high-quality Greek olive oil that tenderizes the chicken and forms the beautiful, golden-brown crust as it grills. Recipe

4-5 medium boneless chicken thighs (or, chicken breasts) (about 1.5 lbs.)

¼ cup lemon-infused Laconiko extra virgin olive oil

2 TBSP. fresh lemon juice 

1 tsp. mustard

1 tsp. fine sea salt

½ tsp. freshly ground pepper

2 TBSP. fresh thyme

1 tsp Greek dried oregano

½ tsp. paprika 

--- toasted Greek pita wedges

--- tzatziki (optional)

1. Dry the chicken well with paper towels. Trim it and cut it in pieces, about 1” to 1½”.

2. Prepare the marinade: In a large bowl mix the extra virgin olive oil, the lemon juice, mustard, thyme and the seasonings. 

3. Place the chicken pieces into the marinade, cover and refrigerate for 4 hours. 

4. Soak 5-6 bamboo sticks for 30 minutes into water. Thread five pieces of chicken to the skewers.

5. Grill the chicken, basting it once with any of the marinade that is left in the bowl. Do not overcook.

6. Transfer the kebabs to a platter, cover with a piece of foil and let it rest for 5 minutes.

7. Garnish the serving platter with the grilled pita bread wedges and some lemon wedges. Serve alongside a bowl with tzatziki (yogurt, cucumber and garlic spread).

If using a charcoal grill, grill the chicken over direct, medium-high to high heat for 4-6 minutes per side. If using a gas grill, grill the chicken over direct heat for 4-6 minutes per side with a grill temperature (lid closed) about 400°- 450°.
