Inspired by grilled Cypriot Halloumi Cheese and Lemon Laconiko you can round out this tapas style meal by also grilling asparagus, carrots, and zucchini. If you like seafood, you can add some pan seared scallops to the meal to round out this less than 30 minute meal!
Slice some carrots and zucchini, and season slightly with Laconiko lemon or Laconiko Greek Seasoning Olive Oil and some dried oregano. Grill carrots, zucchini, and asparagus approximately 7-10 minutes and flip to other side appx. 4-5 more minutes until you get a good char on veggies. If you do not have grill, put on top rack and broil in oven for same amount of time. After finished, add more Laconiko olive oil on top as finishing oil.
Next add Laconiko Olive Oil, plain, Lemon or Greek Seasoning to pan and scallops. Add enough oil to cover nearly half of scallops. Pan sear on medium-high heat for 7 minutes, and then using tongs flip to cook other side of scallops. To avoid olive oil from spraying, partially cover pan with lid leaving some air to get in pan. Once plated, add Laconiko Lemon or Greek Seasoning Olive Oil on top.
Finally, grill Halloumi Cheese (if large piece, cut in half to make thinner). Grill for appx 7-10 minutes on one side, then flip for additional 3-5 minutes. (If you don’t have grill, you can pan sear in olive oil and pan) Should slightly melt and loosen. Slight char is acceptable. Once plated, add Laconiko Lemon or Greek Seasoning olive oil.
