Grilled Shrimp and orzo with Garlic EVOO

INGREDIENTS:

  • 2 pounds shrimp
  • 1/2 cup EVOO
  • 1 Garlic clove, minced
  • 1 Tbsp Greek oregano
  • 1 Tsp coarse salt
  • 1 Tsp cracked black pepper
  • 1 Tsp garlic powder
  • 1/4 cup scallions or chive
  • 3 cups orzo
  • 1/2 pound shiitake mushrooms

PREPARATION:

This dish can be prepared and served in less than 30 minutes. In this recipe, we’ll prepare the rice first as we want the shrimp to be poured over the rice immediately after they are finished cooking. You may use any type of EVOO you desire with this dish.

For the shrimp, set your stove top on medium high and pour 1/2 cup of extra virgin olive oil into the skillet. Mince the garlic clove, wash and slice the mushrooms and then add the rest of your ingredients to the skillet. At this point, the oil will be hot enough to add the shrimp but as a general rule, do not let any oil sit more than a couple of minutes. You will want to constantly stir the shrimp in the ingredients as total cooking time is only about 8 minutes once the shrimp are placed in the hot oil. When the shrimp are ready, remove from heat and turn the stove top off, then add the orzo. Once that is done, add your scallions, a dash of salt and drizzle your EVOO over the meal.
