Chickpea Salad

2 (15oz) canned chickpeas, drained and rinsed

15-20 cocktail cucumbers, chopped

15-20 grape tomatoes, cut in half

1 bell pepper, chopped

½ red onion, thinly sliced

½ cup Kalamata olives, cut in half

½ cup crumbled feta cheese

2 tbsp. freshly chopped parsley

¼ tsp. red pepper flakes

Ground black pepper and salt to taste 

Delightful amount of Award Winning Laconiko EVOO

Cranberry Pear or Lemon Cucumberr White Balsamic to your liking


Step1. Combine all ingredients: chickpeas, cucumbers, tomatoes, bell pepper, red onion, olives and feta cheese in a large bowl.

Step2. In a jar with a lid add Laconiko EVOO, your preference of Balsamic, parsley, red pepper flakes. Salt and pepper. Close the jar and shake the dressing very well. 

Step3. Dress the salad before serving.
