Chickpea Salad

Ingredients:

2 (15oz) canned chickpeas, drained and rinsed

15-20 cocktail cucumbers, chopped

15-20 grape tomatoes, cut in half

1 bell pepper, chopped

½ red onion, thinly sliced

½ cup Kalamata olives, cut in half

½ cup crumbled feta cheese

2 tbsp. freshly chopped parsley

¼ tsp. red pepper flakes

Ground black pepper and salt to taste 

Delightful amount of Award Winning Laconiko EVOO

Cranberry Pear or Lemon Cucumberr White Balsamic to your liking

Directions:

Step1. Combine all ingredients: chickpeas, cucumbers, tomatoes, bell pepper, red onion, olives and feta cheese in a large bowl.

Step2. In a jar with a lid add Laconiko EVOO, your preference of Balsamic, parsley, red pepper flakes. Salt and pepper. Close the jar and shake the dressing very well. Step3. Dress the salad before serving.
