Laconiko's GREEN Spartan Smoothie

Do you ever have those moments when you're just feeling really sluggish & lacking energy? Or maybe you're looking for something really easy to add into your daily meal plan that is not only delicious but packed full of nutrients.

We have the solution for you!! This simple recipe is how we start off each morning. It won't take long before you're hooked on them just like we are.
The green color of this smoothie comes from raw spinach. Don't let this scare you...raw, uncooked spinach is completely tasteless, but it sure does make this smoothie absolutely beautiful looking. Let's get started. It'll only take you a few minutes to make and there are several variations to suit all your family member's tastebuds.

Essentials: Makes 2-8oz servings
*1 large handful of uncooked, spinach;
*1 Tbsp ground flaxseeds (Whole flaxseeds will not blend well)
*1 Banana
*1 cup of other mixed frozen fruit (We used pineapple, mango, and peaches). You may use fresh as well, but frozen fruit not only makes your smoothie extra cold but it lasts longer too.
*1 Tbsp good quality honey
* Liquid of choice, such as water or juice (We love this specific Coconut water because it's raw, unprocessed, and DELICIOUS)
*1-2 Tbsp of LACONIKO extra virgin olive oil

How To:
1. Put your spinach, banana, frozen fruit, and Laconiko Olive Oil into a blender. We have a Nutribullet but you can make this smoothie with whatever blender you have!! No need to buy any special equipment. You don't need expensive machinery to be healthy.
2. Add in the flaxseeds, honey, and liquid.
3. What a beautiful view from the top!
4. Mix it on up until very smooth. We usually let this run in the blender for about 2-3 minutes just to make sure all the frozen fruit and the spinach is broken up.
5. The finished product!! Don't let the color intimidate you. One sip of this powerhouse and you'll be in love!!

Laconiko's Farm-Fresh Green Beans

e are so excited to share this yummy meal with you. Over the weekend we went to our local farmers market and found these FRESH, local beauties.
It inspired us to make a very traditional Greek meal, called "Fasolakia". It's a nice spin on the plain ol' green beans that many people are used to. This is heavy enough to be a meal, but also perfect as a side dish if you prefer.
INGREDIENTS:
1. Fresh green beans (wash and cut off just the ends)
2. LACONIKO extra-virgin olive oil
3. 1 small can diced tomatoes
4. 1 carrot (washed, peeled, and chopped)
5. 1/2 of a large white onion (diced) or 1 small onion
6. 2 cloves of garlic (minced)
7. Fresh parsley (chopped finely)
8. 3 fresh Zucchini
9. Broth/stock (either chicken or vegetable-depending on preference)

HOW TO:
1. Wash & Chop your vegetables (green beans, carrot, and zucchini)
2. Dice your onion, garlic & parsley & put into a large soup pot with olive oil. Saute for a few moments until the onion is clear.
3. Add in your remaining vegetables, give a quick stir, then add in your can of diced tomatoes. Stir in along with a good amount of salt & pepper to taste.
4. Add in about 1 cup of water and 1 cup of stock (or enough of each to just cover the green beans)
5. Cover and bring to a boil until all vegetables are soft to the touch with a fork (about 40-45 min)
6. Serve this local, healthy meal along with a delicious Greek salad & your favorite fish. Don't forget to drizzle Laconiko's extra-virgin olive oil as a finish to this meal. The vegetables really absorb that sweet, buttery flavor.

Laconiko's DETOX meal...

After several weeks of non-stop travel and events, which included mainly carry-out and drive through meals, we were desperately in need of our absolute favorite Laconiko DETOX meal. It's full of fresh, wholesome vegetables of your choosing & can easily be adjusted to suit anyones preferences. This easy and inexpensive meal is sure to make you feel clean & energized anytime!

Ingredients:
1. Green zucchini
2. Red beets (with leaves)
3. Orange & White cauliflower
4. Rainbow chard
5. Steamed rice (optional if you are on a low-carb diet)
6. LACONIKO extra-virgin olive oil
7. Feta cheese (we used the authentic sheep's milk feta, rather than cow's milk)
8. Dried oregano
How to Make:
1. Cut stems off cauliflower & cut into large pieces.
2. Cut leaves off red beets & set aside. Then, peel first layer of beets. Rinse beets & leaves thoroughly.
3. Cut off the ends of zucchini & rinse.
4. THOROUGHLY rinse the rainbow chard, after chopping off stems. It's very important to rinse and wash rainbow chard 3 times to get all the dirt and grit off it.
5. Place about 1/2 -1 cup of water in the bottom of a deep soup pot. When boiling, add in ALL vegetables, leaving the cauliflower and zucchini on top. Lower temperature, cover, and let cook until vegetables are soft to touch.
6. Rinse and strain vegetables very well.
7. Liberally drizzle vegetables with LACONIKO extra-virgin oil oil, Sprinkle with salt and pepper, and give a final touch of dried oregano.
8. Serve on top of steamed rice if you choose. We love our with feta cheese drizzled with LACONIKO olive oil, salt, pepper, and oregano. You could even add in some delicious Kalamata olives.

Laconiko's Infamous Spanakopita (spinach pie)

Need we say more?? This is our easy, delicious recipe for a traditional Greek Spanakopita, also known as a spinach pie. Let's get started. You don't want to waste time when you could be sitting down enjoying this savory little appetizer. Here we go!
Essentials:
1/2 large sweet yellow onion, diced
1 tsp salt
1 tsp pepper
3/4 cup Laconiko Extra-virgin Olive Oil
2 lb bag spinach, washed, and dried thoroughly
2 cups crumbled feta cheese
Ready made, fresh pizza dough (not frozen)
3 eggs, lightly beaten
A wooden rolling pin (floured)
A large, square roasting pan (liberally coated with Laconiko Olive Oil)

How To:
1. Preheat oven to 375 degrees
2. Mix all ingredients into a LARGE bowl until everything is evenly coated.
3. Cut the fresh dough in two pieces. One piece should be slightly larger than the next. Roll out the large piece into about 1/4 inch thick flat circle.
4. Roll the pizza dough into the coated roasting pan, then fill it with spinach/feta mix.
5. Fold over the excess edges. Try to stretch them as far as they will go, but not too far as to tear the dough. You can lightly brush the edges with some Olive Oil to help it stay.
6. Now, roll out the remaining pizza dough into a 1/4 inch thick circle as well. Roll it out ontop of the spinach mixture in the prepared pan. Tuck all the edges around the rest of the dough forming a sealed case.
7. Lightly coat the entire "package" with Laconiko Olive Oil, then slice into even pieces. Don't cut all the way through the bottom, just simply mark the dough.
8. Bake for 45-50 minutes, or until it becomes golden brown. Keep a close eye because each oven is a little different.
Look at this beauty!!! Noone will be able to resist this amazing, traditional dish. And don't worry about leftovers, because there won't be any :)

Laconiko's SPARTAN Sandwich

To finish off "sandwich week", we thought we would leave you with one of our ABSOLUTE favorite go-to sandwiches...the SPARTAN sandwich. We named it this to honor our heritage & the place where our groves are located. This is such a beautiful sandwich because it's made with very few, highly tasty ingredients-the epitome of Greek cuisine. Make it for yourself this week!! It's great ahead of time to take to work.
Ingredients for 2 LARGE sandwiches:
- 1 large loaf ciabatta bread (or any other loaf you love)
- Ripe tomatoes sliced
- Laconiko's Kalamata olives (pitted and sliced in half)
- Laconiko's Extra-virgin olive oil
- Dried oregano, Salt, Pepper
-Feta cheese (crumbled)
How to Make:
- Slice the ciabatta bread down lengthwise
- On the top side of the bread, drizzle a good amount of Laconiko's Extra-Virgin Olive Oil and sprinkle dried oregano.
- On the bottom half of the bread, place your sliced tomatoes, sliced olives, and crumbled feta cheese. Drizzle again with Laconiko's extra-virgin olive oil, salt & pepper.
-Close the sandwich, slice in half, and EAT!!! This is very filling and satisfying. You'll love the combination of salty and savory in every bite.

Laconiko's Tuesday Tuna

We know what it feels like to make it through the typical Manic Monday! By the time Tuesday comes around we usually want something a little more simple & easy to make for those Tuesday lunchboxes.
This tuna recipe is so pure & simple. You probably already have the ingredients sitting in the fridge & cupboard. The best part??? This is literally a one bowl meal. All you need is a cutting board, one bowl, and a knife. Let's get started!
ESSENTIALS: (for 4 sandwiches)
-2 cans of albacore tuna in water (strained)
-2 stalks of celery, finely chopped
-3 or 4 slices of dill pickles, chopped
-1/2 sweet onion, finely chopped
-1 small red bell pepper, finely diced
-2 healthy spoonfuls of Mayo
-1 Tbsp of spicy brown mustard
-LACONIKO extra-virgin olive oil
-Salt and Pepper
HOW TO MAKE:
-Place drained tuna in a medium-sized bowl.
-Finely chop all solid ingredients and add to bowl.
-Also add in the mayo, mustard, salt, pepper, and LACONIKO extra-virgin olive oil.
-Mix all ingredients together using a fork until just combined.
-Place in fridge to chill while you wash your dishes.
-When ready, you can either place tuna on your favorite toasted bread OR you could make a heart-healthy wrap like we did below. We had lettuce, tomato, and a scoop of tuna inside a whole grain wrap.
-You can make this your way by adding in avocado, various cheeses, or even bacon for a heavier sandwich.

Homemade Laconiko guacamole & chips

With warm weather quickly approaching, impress your friends and family with this incredibly easy and delicious homemade guacamole & chips recipe. It's so light and fresh and only uses whole ingredients.
ESSENTIALS: - 4 ripe (soft) avocados scooped out & diced
- 1/2 a red onion, diced
- 1 ripe red tomato, chopped
- 1/2 jalapeno pepper, finely chopped (with seeds removed- the seeds are the hottest part)
- Lemon juice
- Salt & Pepper
- Cumin
- Laconiko extra-virgin olive oil
- Sweet corn (optional)
HOW TO MAKE:
1. First, dice/chop all the solid ingredients and place in a large bowl.
2. Add in approx 1 teaspoon of ground cumin, a heavy sprinkle of salt & pepper, a few teaspoons of fresh lemon juice, and a liberal amount of Laconiko olive oil. Start off with a few drizzles and add in more as you go along (It's easier to add more in than it is to thicken your guacamole).
3. Using two forks, mash together all the ingredients until you reach desired consistancy.
4. Place bowl in the fridge and let it chill while you're making your homemade chips (recipe below)
------------------------------------------------------------------ ESSENTIALS:
-Ready made fresh pizza dough (usually in the refrigerator section at your local grocery store)
-Laconiko Extra-Virgin Olive oil
HOW TO MAKE:
- Roll out your dough onto a floured surface. It helps if you pre-flour your rolling pin as well.
- Use a sharp knife to evenly cut thick strips in the dough. TIP: Lightly brushing your dough with a tiny bit of Laconiko olive oil prior to cutting will help cut evenly and smoothly.
- Brush the flip side of the strips with Laconiko's extra-virgin olive oil, place on a baking sheet covered in aluminum foil, and bake at 325 degrees for approx 20 minutes (or until lightly golden brown).
- Once complete, place chilled guacamole into a bowl and surround with your delicious homemade crispy chips.These won't last more than a couple minutes because we guarantee you'll eat them all.

Laconiko's Crispy KALE CHIPS!

You read correctly...we said "kale" chips. Trust us, one taste of these and you will quickly be replacing those unhealthy potato chips for something so nutritious and tasty. Make these anytime of day for a quick, healthy snack or as a side to a great sandwich. With almost no prep time, you could make these as soon as you're done reading this post!
ESSENTIALS:
-One bag of cleaned kale
-LACONIKO's original extra-virgin olive oil
-Salt & pepper
THAT'S IT! Can you believe how simple the ingredient list is?!
HOW TO:
1. Rinse and strain your bag of kale.
2. Once the kale is completely strained(dried), spread out evenly onto a cookie baking dish.
3. Sprinkle with a few heavy sprinkles of coarse sea salt followed by crushed black pepper.
4. Drizzle with a liberal amount of LACONIKO extra-virgin olive oil then use your clean hands to give the kale chips a nice little massage & toss to make sure each leaf has equal amounts of salt/pepper and olive oil.
5. Ready to bake!! Place kale in a 400 degree oven for 20 minutes.
6. EATING TIME!! Enjoy your crispy, crunchy, healthy Laconiko treat!

Orange-infused Olive Oil CAKE!

While olive oil is best known for being used in meals, it can also be used in several desserts. We used our original extra-virgin Laconiko olive oil AND our orange-infused olive oil for this light yet tasty treat. It will satisfy even the non-dessert lover's sweet tooth :)
ESSENTIALS:
1 and 3/4 cups all-purpose flour
4 oranges (naval or blood oranges)
3/4 cups sugar
1/2 cup milk (either 2%, whole milk, or buttermilk)
3 large eggs (room temperature)
1/3 cup ORIGINAL Laconiko extra-virgin olive oil
1/3 cup Orange-infused Laconiko olive oil
1.5 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt

HOW TO:
1. Preheat your oven to 350 degrees. Spray your 5x9 loaf pain with some non-stick spray.
2. Using a juicer or equivalent machine, squeeze the juice out of 4 oranges into a bowl.
3. Combine the juice with the buttermilk and sugar. Whisk to combine well.
4. Add in the eggs and oil. Whisk to combine.
5. In a separate bowl, sift together the flour, baking powder, baking soda, and salt.
6. Use a spatula to slowly add and mix the flour mixture into the buttermilk mixture.
7. Place mixture into prepared loaf pan. Bake at 350 for 50 minutes (approximately) or until a toothpick comes out dry in the middle.
8. Let the cake cool for 15 minutes before turning it over and out onto a separate plate.
Slice & Enjoy!!

New Years Brunch Souffle

After a night full of...partying, what's better than something super easy you can pop in the oven to eat New Years Morning?? Our Ham, Egg, & Cheese souffle is the perfect way to kick off a morning with your friends and family.
ESSENTIALS
Laconiko extra-virgin olive oil
1 package of thinly sliced deli ham
1 pouch of Italian blend shredded cheese
1 cup of chopped Gouda cheese (the softer the better)
1 loaf of sliced Texas toast or thick white bread

7 eggs 2.5 cups milk (whatever you have in the fridge)
Salt & Pepper
STEPS
1. Cut the edges off the entire loaf of bread. Then, use a pastry brush to lightly coat each slice with Laconiko Oil.
2. Beat 7 eggs & add in 2.5 cups of milk in a large bowl with a hefty sprinkle of S&P. Mix well.
3. Gather your ham and cheese ingredients.
4. Now we are ready to assemble! In a souffle pan, spray PLENTY of PAM or other non-stick spray. Don't skimp on this part.
5. Start by placing enough slices of bread around the bottom of the pan until it's covered.
6. Then, sprinkle half of the ham, Gouda, and Italian blend evenly to cover the bread.
7. Repeat steps 5 & 6 and finish out your ingredients. Once you are done with your top layer of ham/cheese, pour the entire bowl of eggs & milk evenly over entire souffle.
-Cover souffle with saran wrap and place in the fridge overnight.
-Tomorrow morning when you wake up, uncover souffle and place in a 375 degree oven for 45-50 minutes until you have a nice golden top.
-This is a savory, hot breakfast that everyone will enjoy!! I know we will be.

Laconiko's Chicken & Rice Stir-fry

s you've seen in our last several recipes, Laconiko's extra-virgin olive oil isn't just for making Greek dishes. We used our original olive oil along with 2 of our infused olive oil's to create an amazingly delicious Asian classic...STIR FRY! This will take you less than 30 minutes to make. Try it out one weekend night or when you're in a pinch for time after work one evening.
INGREDIENTS ( Enough for 6 servings)
- 4 chicken breasts, cleaned and diced
- 1 white cooking onion
- 1 bag mixed, frozen vegetables (we used the steamable bag)
- Quick cooking white rice (steamed or microwaved)
- 4 beaten eggs
- S&P
-Laconiko's Original extra-virgin olive oil
-Laconiko's Garlic-infused olive oil
-Laconiko's Basil-infused olive oil
1.Saute' 1 diced onion and 3 strips of bacon in Laconiko's Original olive oil until golden and slightly translucent (about 2-3 minutes).
2.Add diced chicken, 3 pinches of salt, and 1 pinch of pepper. The smaller the chicken pieces, the faster it cooks.
3.Just before the chicken is cooked all the way through, drizzle with garlic olive oil (about 3 Tbsp) depending on your liking.
4.Next, add your steamed vegetables followed by the already prepared rice(about 4-5 cups cooked). Stir until evenly distributed.
5.Add in 4 beaten eggs into the rice/chicken mixture and constantly stir until the egg is fully cooked and incorporated (about 4-5 minutes). While you’re tossing the egg/rice mixture to cook over medium to low heat, add in about 3 Tbsp of Laconiko’s basil olive oil.
6.When everything is cooked, serve into individual bowls and enjoy this Greek/Asian fusion dish.

Laconiko's Infused BISCOTTI

When a sweet craving hits, or when you're looking for just the right partner for your morning cup of coffee, Laconiko's infused biscotti is the perfect touch. We spent last weekend thinking of a couple different ways to add variety to the traditional almond cookie. Biscotti is so versatile that it can be sweet or savory. We chose to give in to our sweet tooth this time around. Below you will see the basic essentials which you will need for EACH recipe. Our first loaf is Almond and Pistachio Lemon-infused biscotti. The second loaf is dried cranberry, almond, chocolate & Orange-infused biscotti. The only difference between the two loaves are the mix-ins & the flavor of Laconiko infused oil.
MAIN INGREDIENTS:
3 cups all-purpose flour (plus some for dusting your surface and hands)

3/4 cups sugar
2 tsp baking powder
1/2 tsp salt
1/4 cup Laconiko infused olive oil (Lemon & Orange)
3 whole eggs plus 1 extra yolk
1and 1/4 cups of your favorite mix-ins
(We used Almonds+Pistachios for our first loaf & Cranberries+Almonds+Dark chocolate for the 2nd loaf)
1 bag white chocolate chips (for the Lemon-infused biscotti)
1/4 cup heavy cream
HOW TO:
1. Preheat oven to 350. In a bowl, whisk together the flour, sugar, baking powder, and salt.
2. In a separate larger bowl, crack 3 whole eggs and 1 yolk. Add in 1/4 cup of either Laconiko's lemon-infused olive oil or orange-infused olive oil (depending on which biscotti flavor you are making).
3. Using an electric mixer, mix the eggs and the oil on medium speed. Then on low speed, gradually add in the flour mixture to the egg mixture until well combined.
4. Now, mix in the additions in the "ingredients" list, depending on which biscotti you are making. For the lemon-infused biscotti you'll want to gather 1 and 1/4 cups of unsalted almonds and pistachios in a bowl.
For the orange-infused biscotti you'll need the same amount of dried cranberry, dark chocolate, and almonds.
Place in a mini food processor and pulse until you get everything into a semi coarse consistancy.
5. Put some flour in the palms of your hands, and mix the "add-ins" into the dough until well combined.
6. Then, remove the dough from the bowl and shape into one slender LOG and flatten so it's about 2 inches high
7. Place log onto a baking sheet covered with wax paper. Bake for about 30-35 minutes. Then, let cool for about 15-20 minutes and reduce oven temperature to 325 degrees.
8. Using a serrated knife, cut log diagonally into 1/2 inch segments.
9. Place segments cut-side down back on baking sheet and put in the oven for another 40 minutes or until lightly golden on both sides.
10. If you choose, you can now combine the white chocolate & heavy cream into a saucepan and melt over low heat. This was used in our recipe for dipping half of the Lemon-infused biscotti. (Optional)
11. After they cool, enjoy with a nice cappuccino or a cold glass of milk

Laconiko's Lemon & Rosemary Potato salad

Just because summer BBQs are the past and Autumn is among us, it doesn't mean that potato salad was left behind with the hot sun!! There are so many ways to make a great potato salad for every season. Tonight's recipe included the following ingredients, which you likely already have in your pantry/fridge:
Recipe for 4 servings
Ingredients:
-10 boiled potatoes of choice (we used butter potatoes)
-Chives (chopped)
-1/2 a red onion (finely chopped)
-2 stalks of celery (finely chopped)
-1 tsp LACONIKO Rosemary-infused Olive Oil
-Liberal amount of LACONIKO original extra virgin Olive Oil
-1 Tbsp pickle relish
-Squeeze of a fresh lemon (or 1Tbsp lemon juice)
-Salt & Pepper
Simple "How To":
1. Boil your potatoes until you can easily poke through them with a fork.
2. Once done, drain water from potatoes and let cool.
3. On a cutting board, finely chop your chives, red onion, and celery.
4. Combine ingredients into a bowl with coarsely chopped potatoes. Add in the pickle relish.
5. Add in your rosemary-infused & orginal LACONIKO extra-virgin olive oil.
6. Sprinkle salt & pepper to taste, then squeeze in fresh lemon juice.
7. Mix thoroughly until potatoes are all evenly coated.

Laconiko's Garlic Bread

Whether you're looking for a savory snack or a perfect compliment to your home-cooked meal, Laconiko's Garlic Bread is the perfect fit. You can't go wrong when combining the buttery taste of Laconiko extra-virgin olive oil with the fresh taste in Laconiko's NEW garlic-infused olive oil. Start making this bread about 15-20 minutes before your main course is complete. Here's what you'll need:
ESSENTIALS
-1 large loaf of your favorite baguette
- Laconiko extra virgin olive oil AND garlic-infused olive oil
- Crumbled feta cheese
-Shredded or freshly grated Parmesano
- Dried oregano
HOW TO MAKE
1. Cut the baguette long ways down the middle
2. Brush an even coating of Laconiko's garlic-infused olive oil across both halves of your baguette
3. On one half, sprinkle a liberal amount of feta cheese and a touch of dried oregano (or more if you prefer)
4. On the second half, sprinkle a nice layer of Parmesano cheese
5. Next, drizzle some of Laconiko's original extra-virgin olive oil across both sides of baguette
6. Place in a 375 degree oven for about 15-20 minutes, or until golden brown on the top.
7. Slice and enjoy with your favorite meal and glass of wine.

Dino's Signature Sandwich

Ham + Cheese, Peanut Butter + Jelly, Bologna + Tomato....BORING! These sandwiches can't compete with what we have come to call "The Dino". When it comes to cooking, Dino does not like to follow recipes. Rather, he prefers to take whatever flavors he is craving and throw them all together into one dish. Needless to say, they always turn out to be so delicious and unique!
Whether you're looking for a breakfast sandwich or something savory for supper, this sandwich will not disappoint. There are so many flavors in this sandwich which work in perfect harmony to leave a party in your mouth...confetti and all. Here we go...
THE ESSENTIALS:
- Thinly sliced roast beef
- Pepper jack cheese
- Sliced whole wheat sourdough bread
- Eggs
- Laconiko rosemary-infused olive oil
- S&P
- Dried oregano
SIMPLE STEPS:
1. Cook up your egg using Rosemary-infused LACONIKO olive oil. If you've never cooked an egg in a pan with about 1/2 inch of olive oil, you're missing out. Don't be afraid, the egg merely cooks in the olive oil, it doesn't soak it up but boy does it absorb the flavor. Cook the egg until the yolk is done.
2. Take two slices of the sourdough bread and drizzle lightly with Rosemary-infused Laconiko olive oil. Then, cut one square of Pepper Jack cheese into 2 triangles. Place them on top of the bread. Then, pile the roast beef high over the cheese. This is why it's best to ask for very thinly sliced roast beef, so you can use a lot without it being too heavy of a meal. Sprinkle a bit of dried oregano and S&P on the roast beef. Then place 2 more triangles of cheese overtop.
3. Top with the perfectly cooked egg and cover with second slice of sourdough bread.
4. Place the sandwich on a baking sheet covered with aluminum foil. This makes for super easy clean up.
5. Pop in a 375 degree oven (or low broiler setting) for about 5 minutes per side. Stay close and watch the sandwich. Every oven is different and you don't want to burn the bread. You just want a golden brown crust and melted cheese.
Flip to cook the other side.
6. One bite of this masterpiece is all it takes to fall in love. You'll be serving up THE DINO to all your loved ones. We hope you enjoy!

Laconiko's Lemony oven-roasted chicken & Rosemary potatoes

It's hard to believe (now that the entire east coast is waiting for Hurricane Irene) but we had the most beautiful weather this past week. In the mornings, a cool dew covered the grass, and a nice 70 degree breeze followed throughout the afternoon. It felt like Autumn was in the air. We decided it was the perfect opportunity to make an oven roasted chicken with potatoes using two of our newest infused olive oils, Lemon and Rosemary. This is such a comforting meal which appears complicated. You wouldn't believe how low maintanance it is to make.
Essentials:
-A whole chicken
-Salt & Pepper
-Dried oregano
-Laconiko Lemon & Rosemary-infused olive oils
-Yukon & Sweet potatoes (or whatever your favorite potatoes are)
- Half a lemon
- Low sodium chicken broth
1. After washing the chicken in the sink, place whole chicken in a large roasting pan.
2. Sprinkle a generous amount of salt and pepper all over chicken.
3. Pour a liberal amount of Laconiko Lemon-infused olive oil and give a good rubbing.
4. Pour about 1-2 cups of chicken broth into bottom of pan and place chicken in a 375 degree oven for about 2 hours (or until chicken is cooked thoroughly). In the meantime, we are going to get started on our rosemary potatoes.
1. Wash and cut potatoes of choice into thick chunks. Place in a bowl.
2. Coat with Laconiko Rosemary-infused olive oil, salt, pepper, dried oregano, and the juice from half a lemon then gently toss.
3. Open oven and place in pain when chicken is about 30 minutes away from being fully cooked. Remember, potatoes cook much faster than the chicken so do not put them in together or you'll end up with smashed potatoes :)
4. Place back into oven until the potatoes are soft when poked with a fork, and chicken is golden brown on the outside, and pale on the inside. Remove and let cool slightly before eating.
Serve with a nice glass of your favorite red wine, sit back, and enjoy this wonderful home-cooked meal with your loved ones.

Laconiko's lemon zest Zucchini

NOW is the time to enjoy the season's most fresh garden vegetables before the coolness of the fall settles in. What healthier way than by steaming up local Zucchini and Yellow squash. And what TASTIER way than by topping it with Laconiko's NEW lemon infused Olive Oil. This is so perfect because, as we all know, it seems like you never have lemons in the house the one time you actually need one. It's like a two for one deal where you get the smooth, buttery sweetness of Laconiko's original Olive Oil + the light fresh zest of lemon in one bottle. Try this recipe out as a way to celebrate the last few weeks of summer.
ESSENTIAL INGREDIENTS:
-Fresh, local zucchini squash

-Laconiko's Lemon infused Olive Oil -Salt & Pepper
STEP-BY-STEP:
-After washing your vegetables, thickly chop your zucchini squash
-Place in a pot with enough water to just cover the veggies; Bring to a boil
-Boil zucchini until they are soft enough when poked with a fork or knife; Then strain to allow excess water to leave.
-Drizzle liberally with Laconiko LEMON-infused Olive Oil, a sprinkle of salt, and a few grinds of fresh pepper.
**Although we used Laconiko's NEW infused olive oil in this recipe, you could substitute this for Laconiko's original olive oil and a squeeze of fresh lemon juice.

Simple Laconiko egg salad

There is something so fascinating about an egg. You can use it to make decadent desserts. Or you could simply cook it up any style you wish for a meal. Ask anyone, and you will find that each person eats their eggs differently. Some top theirs with just salt & pepper, others with avocado, and many with ketchup. But you haven't TRULY eaten an egg until you top it with a drizzle of Laconiko.
Today's recipe is the perfect combination of the simple yet amazing egg + buttery, smooth & sweet Laconiko extra virgin olive oil. The best part is that there is no measuring. You read correctly, NO measuring. This recipe is catered specifically to YOUR taste, as are most of our recipes. It's time to get cracking (no pun intended!) :
Essentials:
-Boiled, peeled Eggs (We used 8, but they don't last long)
-Laconiko Olive Oil
-Mayo
-Dijon mustard
-Salt & Pepper
-Paprika
-Mini pickles (optional)
How To Make:
1. Take your boiled eggs and place in a large bowl. Using a sharp knife, slice eggs and then chop into smaller pieces depending on how big you like them in your egg salad.
2. Add in a healthy drizzle of Laconiko olive oil to evenly coat all eggs, a Tbsp of dijon mustard, a few Tbsp of mayo, finely sliced pickles, a 1/2 tsp of paprika (or 1tsp if you like it), a sprinkle of pepper, and a light sprinkle of salt (remember, it's easier to add it in later but you can't remove it if you put too much)
3. Mix gently and make sure all eggs are evenly coated with all the seasonings you added.
4. Refrigerate for a few hours if you prefer (this is not necessary but it does taste better)
5. Serve on top of a salad, in a wrap with fresh spinach, or as a sandwich using freshly baked bread. Most importantly, finish off with a drizzle of Laconiko to add an extra touch of buttery smoothness. Enjoy!!

Laconiko's white pasta & BBQ ribs

What better way to celebrate America's Birthday than by having a BBQ with your closest friends & family. We decided to combine our respect & gratefulness for our American freedom with our pride and love for our homeland, Greece, in a cookout we just had to share. We have to admit, these two dishes were so easy and clean, and required almost no prep time.
The first dish is a simple, yet elegant spaghetti. Here are all the essentials:
(Your favorite angel hair pasta, LACONIKO olive oil, Freshly ground black pepper, and grated parmesano reggiano cheese)
Bring a pot of water to a boil with a sprinkle of salt, add pasta and cook until al dente. Drain well then drizzle with a healthy amount of Laconiko's extra-virgin olive oil. Then, toss with plenty of Parmesan cheese until you get the consistancy you want. Top with lots of freshly ground black pepper for the perfect hint of spice. Lastly, drizzle Laconiko olive oil onto your pasta and serve with a sprig of fresh basil.
The second part of our meal was the baby back ribs. We used a classic steak seasoning rub on the first rack. This was great because of how much black pepper and smokeyness it had. The second rack was rubbed down with a Cowboy Blend (garlic powder, salt, pepper, paprika, cayenne pepper). First, drizzle Laconiko olive oil onto both sides of ribs. Then, take your favorite dry rub and gently massage into the ribs. Don't worry, you cannot over season these. Then, place on your grill and cook to perfection.

Laconiko Curry Chicken

Today LACONIKO meets the middle east with an incredible recipe that is sure to satisfy your taste buds. This recipe combines the smooth buttery taste of Laconiko olive oil with the spicy, smoky, heart warming spices of the East. This dish is so easy to make and is wonderful when you are short on time or simply tired of the same old chicken recipe.
INGREDIENTS:
- 1.5 lbs chicken (we used tenderloins and thighs but anything works)
- LACONIKO olive oil for sauteeing & final drizzle
- Salt (1/4 tsp), Red pepper flakes (1/4 tsp), Cumin (2 tsp), Curry (1.5 tsp), ground ginger (2 tsp)
- Red curry paste (2 Tbsp)
- 1/2 cup coconut milk (regular OR low fat)
-1 can (14.5oz) Diced tomatoes (any brand)
-1 yellow onion
- Rice (steamed or even a ready rice)
HOW TO MAKE:
1. Gather all the ingredients on your countertop for easy access.
2. Combine salt, red pepper flakes, cumin, curry, and ground ginger in a medium-sized bowl. Mix well.
3. Cut chicken into 1 inch cubes. This makes for faster cooking and easy eating.
4. Place chicken into bowl with seasonings
Toss until evenly well-coated
5. Drizzle enough LACONIKO olive oil into a pan to coat the bottom. Then add chopped onion & chicken. Cook for about 8 minutes (or until onions are tender).
6. Stir in the tomatoes and curry paste
7. Then stir in the coconut milk
8. Bring to a boil, then lower temperature to medium and let simmer for about 20 minutes.
9. Spoon a serving of rice onto your plate. Then top with plenty of chicken, sauce, and a liberal drizzle of LACONIKO to finish it off with a buttery flavor for a hearty, flavorful meal which is sure to comfort you on any night of the week
